Recipe: Low GI Crêpes For Candelmas

Happy Candlemas! Did you know? In France, Candlemas is called “Chandeleur”, and it is traditional for us to eat crêpes on this day. And with this low GI recipe, 1 crepe = less than 10 g of carbs!

Ingredients For 15 Crepes

  • 1 cup all-purpose flour
  • 1 cup Maïzena
  • 1/2 cup lupin flour
  • 1/3 cup milk
  • 1/3 cup water
  • 2 eggs
  • A tiny pinch of salt

Steps

  • Put all the ingredients in a bowl and mix until there are no more lumps.
  • You can leave the dough to rest in the fridge (traditional way of doing crêpes), or use it right away.
  • Pour the dough into a very hot and well greased frying pan, let it cook for a few moments, then turn over to cook the other side.
  • Grease the pan about every 3 pancakes.
